Pumpkin Mini Muffins with Cream Cheese Frosting

This morning, one of the mom’s in my Bible study brought in a batch of spice cupcakes with cream cheese frosting. A delicious and delectable treat.

As my boys were sleeping this afternoon, I decided I would try my hand at some pumpkin mini muffins and cream cheese frosting that would meet the gluten free and dairy free diet of our family.

Pumpkin Muffins

Ingredients:

  • 1 1/2 cups gluten free flour (I used brown rice flour)
  • 1 tsp baking soda
  • 1 1/2 tsp xanthan gum
  • 3/4 tsp salt
  • 1/2 tsp ground cinnamon
  • 1/2 tsp ground nutmeg
  • 1 cup pumpkin (I used a half can of pumpkin, but I am sure a cup of pumpkin puree would be divine in this recipe)
  • 1/2 cup sugar
  • 1/2 cup oil
  • 1/4 cup water
  • 2 eggs

Directions

  1. Preheat oven to 350 degrees Fahrenheit. Spray mini muffin tin with cooking spray.
  2. In a medium bowl combine flour, baking soda, xanthan gum, salt, ground cinnamon, nutmeg, and sugar. Mix well and then, using a mixer, beat in pumpkin, oil, water, and eggs until well combined.
  3. Fill mini muffin tin cups 1/2 to 3/4 full of batter and bake 15 minutes or until the tops of the muffins are golden brown and an inserted toothpick comes out clean.

 

Cream Cheese Frosting

Ingredients

  • 1-8 oz  tub of vegan imitation cream cheese (I use the Tofutti Brand Better Than Cream Cheese)
  • 1/4 cup softened dairy free margarine (I use the Fleischman’s unsalted margarine sticks)
  • 3 Tbsp sugar
  • 1 tsp vanilla extract

Directions

  1. Beat imitation cream cheese, and margarine at medium speed with electric mixer until creamy.
  2. Gradually at sugar beating at a medium speed until blended.
  3. Stir in vanilla.

It is best to allow the mini muffins to cool completely and then let the frosting party begin.

Halloween

Ethan and Hayden were superheroes for Halloween this year. They were not thrilled with the whole idea of dressing up, so here is the only picture I got of them dressed up.

We went Trick-or Treating at David’s place of employment and the boys were able to get a few treats. I am not a huge fan of going from door-to-door, so we opted to stay in.

Ethan and Hayden helped me bake cupcakes. We used a pan that produced pumpkin shaped cupcakes. We decorated them with orange icing and sprinkles.

A Nature Walk

Last week, after our Mom’s Bible Study, I took the boys to the park and David met us there to play. Here are some pictures from the nature walk we took around the water feature they have installed at the park.

Carving Pumpkins

David was off of work on Friday, so we had a bit of fun. We carved the pumpkins we got at the pumpkin patch.

Before we carved the pumpkins, we talked about the pumpkin life cycle. I printed these cards and we used the song From Seed to Pumpkin found here.

We then took the tops off of the pumpkins and began cleaning them out. Ethan didn’t want to have anything to do with the pumpkins innards, however, Hayden wanted to eat them.

After cleaning the pumpkins out, we went to carving.

Ethan chose the facial features he wanted for his pumpkin, I drew them on the pumpkin with a dry erase marker, and he helped cut them out. Here is the end result.

We didn’t think we could trust Hayden with the knife, so we helped him put together a pirate pumpkin.

The Pumpkin Patch

**Just to give you fair warning before reading this post: It is full of pictures.

Last weekend, we went to the pumpkin patch. We had planned to go to a patch on Saturday evening for a movie and a hayride, but it rained all day.

We ended up going to a different pumpkin patch on Sunday and had a blast. There was so much to do at the pumpkin patch. It was like a fall themed amusement park.

We started by going through the maze. Ethan was a bit hesitant at first, but then he got into it. Hayden had a strategy to get through the maze: follow the people in front of you. His strategy worked until he lost the people in front of him (he was challenged by short legs).

After the maze, we did the big slide. It was a lot of fun. Unfortunately we didn’t get any pictures because both David and I slid with the boys.

There was a hay bale maze. Ethan was way into this maze. I think the first maze prepared him.

There was a cool fort and teepee that we spent time playing in.

We went on a hay ride to the pumpkins.

The boys had a blast trying to find the perfect pumpkin to take home.

We then got back on the hay wagon. It took us back to all the fun.

We spent some time in the hay jump. The boys loved playing in the hay.

We went on the big slide one more time, and then we played in the corn.

Before we left, the boys jumped in one of the moon bounces. What a great afternoon we had playing at the pumpkin patch.
